I used to regularly play Pokémon NetBattle (a multi-mass online Pokémon battle simulator) and inside that, they made specific servers that revolves around actually catching Pokémon, raising them from a low level, training against other people and beating Gym Leaders. Fairly sure there are other battle simulators as well!
Yes, exactly like the second half of that, so you make your char, starter pokemon etc, go out, catch wild ones, train them etc.
